Recipe (Sorry no Mastercook out west!)
4 poblano (pasilla) chilies, slice off tops and reserve, clean out seeds
3 cloves garlic
3/4 medium red onion
2 ears corn
8 oz queso fresco
shredded Mexican blend cheese
tomato cheese soup (grocery store fresh made) or roasted red pepper coulis or tapenade homemade
Roast two ears corn until tender in 350 degree oven. Shave kernels from ear. Set aside.
Place poblano chilies in boiling water for 3 minutes, drain and set aside.
In a skillet, saute red onion, garlic and chopped reserved tops of poblano until tender. Mix with queso fresco and some of the tomato/roasted red pepper mix. Stuff poblanos. Place in roasting pan. Top with the rest of tomato/pepper mix and bake at 375 about 20 minutes. Add shredded cheese to top and bake additional 10 minutes or until cheese is melted. Serve with sour cream and guacamole on the side if desired.

Enjoyed the podcast, it was fun to hear two sisters chat about knitting! I am jealous, however….I want to be in Sedona!!

Cheryl- LOVED your podcasts! I just finished listening to all of them, and smiled as I knit, drove, homeschooled, waited in line, etc.. What fun!
I really like hearing about what is on the needles, and the stories behind each project- mostly because I have no knitter friends, so if I can’t “talk knitting” at least I can listen to someone else do it- if that makes sense? Keep up the good work, I am looking forward to the next podcast!
